Let's analyze and make a reflection.
In order to create a kitchen where there is no possibility to have a flue, you need the authorization of the AUSL,
which must issue an exemption to be able to exercise with a kitchen without a flue.
(applying a corrected European law in Italy).
The AUSLs are not obliged but they grant the derogation only after being convinced that the treatment with the air treatment systems, vapors, fumes, smells are effective and above all that will be done with machines that guarantee an almost absolute treatment.
All equipment under the hood must be electric, (mandatory) unless otherwise specified and with AUSL authorizations.
It is imperative that the outside air is discharged (for volumes of a certain importance) and the kitchen areas must have an air change in accordance with the law.
For this reason it is advisable for the customer who contacts us to provide us with a layout of the room to be treated or in the absence of a layout, an approximate hand sketch at the outset.
